Its seeds — actually the dried fruit of the plant — are oval-shaped, longitudinally ridged, and yellowish-brown in colour. When toasted or ground, cumin releases its distinctive warm, earthy, slightly peppery aroma from cuminaldehyde, the primary compound in its essential oil (2.5–4.5% by weight).

India cultivates cumin primarily in Gujarat (Unjha, Patan) and Rajasthan (Jodhpur, Jalore, Nagaur), where the semi-arid climate and sandy-loam soil produce high-oil-content seeds with superior aroma. The crop is sown in October–November and harvested in February–March.
